Instructions:
Pre-heat oven to 400F. Place sealed sous-vide bag in just-below-simmering water to temper 7 mins. Open sealed bag and place the lamb on a baking sheet. Put in oven 10 mins (for medium rare doness.) Let rest before carving. Place sealed sous-vide bag of vegetables in a pot of simmering water 7 mins. Reheat sauce on low heat (do not let boil).
